Marben and The Cloak Bar add two new chefs to the family
 
Toronto dining institution launched new menu Summer 2017
 

  Celebrating 10 years in the industry, Marben (488 Wellington St. W.) is looking to the future, Chris Locke, Executive Chef de Cuisine and Vedhas Deshmukh, Executive Sous Chefadding two new members to its culinary family. Chris Locke joins the team as Executive Chef de Cuisine of Marben and The Cloak Bar, along with Vedhas Deshmukh as Executive Sous Chef. Utilizing the combined industry expertise of these two talented chefs, Marben has introduced a new menu, now available to the public.

Locke joins Marben from Los Colibris/El Caballito, where he served as Chef de Cuisine for almost two years. As a self-taught chef, Locke developed his palate and flavours working around the world including a stint in the French Alps, fine dining restaurants in Australia and at one of the best hotels in the North East of England.
 
Deshmukh brings an East Coast warmth to the kitchen, after working at restaurants in Halifax for the past three years, offering the perfect complement to the genuine hospitality Marben offers. Most recently he was Junior Manager at The Carbon Bar in Toronto.
 
"Chris and Vedhas bring an impressive amount of experience and a genuine sense of hospitality to the kitchen at Marben and The Cloak Bar," says Simon Benstead, owner and proprietor of Marben and The Cloak Bar. "Classics like John's Burger will remain but we look forward to introducing all new menus, staying true to our ethos of offering fresh, locally sourced, ingredient-driven dishes in a beautifully curated space.”
 
Marben’s newly launched menu features innovative takes on classic dishes rooted in tradition, always with a focus on taste and quality. Small plates include Gin and Tonic Ontario Trout ($14) with lemon crème fraîche, borage and compressed cucumber; Heritage Pig Croquette ($13) with tarragon aioli, rhubarb chutney, Dillon’s Absinthe and fennel & celeriac slaw; and the Ploughman’s Board ($18) featuring pasture raised hen’s yolk, shallot, cornichons, parsley, mustard, Maldon and Russet crisps.
 
Large plates champion locally-inspired dining, with featured favourites including Mary’s Garden Salad ($21) with Cookstown greens, asparagus, peas, fava beans, pasture raised egg, fresh herbs and English salad cream; Lamb Duo ($32) with belly and loin, honey crème fraîche, heirloom carrot, shimeji, lamb jus, kohlrabi and lovage; and Penokean Hill Farms Petite Tender ($29) with Ontario heirloom carrots, rapini, red beet, thrice cooked potatoes, shallot confit and beef jus.
